Elaine's Gluten Free Chocolate Cookies

Mix together flour, xanthan gum, baking soda and salt.

In seperate bowl or mixer add cream cheese and pour in melted butter. Add white and brown sugar and mix until sugars are incorporated into to mixture (creamed).

Add vanilla and eggs and mix until well blended.

Add flour mixture mixing until just combined.

Add choclate chips and mix by hand (or on low) until mixed into batter.

Cover and refrigerate for 4 or more hours. can be frozen in a roll at this point.

Bake at 375° for about 10 minutes.

Aunt Donna's Spicy Dill Pickles

Fill sterialize jars with well cleaned cucumbers (any dirt will compromose the crispyness of the pickles).

Add pepper, garlic and dill.

To make the brine add salt, water and vinegar to bowl and stir until dissolved (it takes a while). Mixture will get milky then clear as salt desolves.

Pour brine into jars until full and covering cucumbers. Mix more brine as needed using the proportions above.

Seal with lids and rings.

Store in cool, dry place for 3 months or longer.

Baked Beans

Preheat oven to 350°F 

Soak beans then cook until soft.

Drain and add to pot with other ingredients except bacon. Mix well and top with bacon.

Bake covered for 30 minutes then remove cover and continue baking for another 1/2 to 1 hour until consistency of baked beans.

Slow cooker

Pour tomatoes into slow cooker. Swirl 1/4 cup water in each emptied can and pour into the slow cooker. Add sugar, vinegar, onion, garlic, salt, celery salt, mustard powder, black pepper, cayenne pepper, and clove; whisk to combine.

Cook on High, uncovered, until mixture is reduced by half and very thick, 10 to 12 hours. Stir every hour or so.

First, make the sauce. Take the tamarind pulp (a block about 1 x 2 in (2.5 x 5 cm) and mix it with ½ cup boiling water (you can add a little more if needed to dissolve the paste). Break up the pulp in the hot water, and then press the mixture through a fine-meshed strainer. Discard the solids. To the liquid tamarind concentrate you just made, add the sugar, fish sauce, Thai black soy sauce, Thai sweet soy sauce (if using), and white pepper. Set aside.
